Grilled Mexican Corn with Crema


On the streets of Mexico, people line up at vendor carts to buy giant ears of roasted corn dunked in rich crema Mexicana and sprinkled with chili powder and lime juice. Crema Mexicana is similar to sour cream and can be found in many large supermarkets. If you can't find it, use low-fat sour cream.

6 servings (serving size: 1 ear)

 

Ingredients

  • 1  teaspoon  chipotle chili powder
  • 1/2  teaspoon  salt
  • 1/8  teaspoon  freshly ground black pepper
  • 6  ears corn
  • Cooking spray
  • 1/4  cup  crema Mexicana
  • 6  lime wedges

Preparation

Prepare grill.
Combine first 3 ingredients.
Place corn on a grill rack coated with cooking spray; cook 12 minutes or until corn is lightly browned, turning frequently. Place corn on a platter; drizzle with crema. Sprinkle with chipotle mixture. Garnish with lime wedges.

How to Use a Dash in an English Sentence

Do you use a dash a lot? What about a hyphen? Many people can not tell the difference between them. Some people even think they are the same thing. If you are one of them, check this out and master the dash.

Steps

  1. Know the kinds of dashes. A dash is noticeably longer than a hyphen. There are several different dashes, but the most commonly used are the en dash (–) and the em dash (—). They are so named because they are the same width as the letter n and m, respectively.

  • The figure dash is a special typographical character most often used in phone numbers. Since it's normally unavailable in word processing, you can simply use a hyphen. (Example: 408‒555‒6792, or use 408-555-6792.)

  • An en dash (–) is most commonly used to indicate a range of numbers. It is longer than a hyphen although a hyphen with spaces surrounding it can be used if a dash is not available. In Microsoft Word, doing this will automatically change the hyphen into an en dash. (Example: August 13–August 18, or pages 29–349. Note that there should be no space around the en dash.)

  • An em dash is most often used to indicate a break in thought or to set an appositive [2] off from the rest of the sentence. It can also be used to show a date when the time frame in question has not yet ended (Example: John Smith, 1976—).
    The remainder of this article will address using the em dash.
  1. Identify an independent clause: Before you begin using a dash in a sentence, you must know what an independent clause is. An independent clause is one that can stand on its own because it contains both a subject and a verb, for example:
    • I love pizza.
    • My mom makes me dinner.
  2. Use the em dash: Understanding how to identify an independent clause, you're ready to begin using a dash.

    • Most commonly, a dash connects an independent clause with another, with a separate or interrupting thought plus a conjunction like or, but, yet, as, for, and after the second dash.
    • The dash works somewhat like parentheses or commas, but it is used where a stronger punctuation is needed. It can connect an independent clause with the 'interrupting' thought like so:
      • Independent clause—thought—independent clause.
      • Independent clause—thought.
  3. Put your sentences together: Now practice using a dash. Here are some examples of a dash being used correctly:
    • I'd better have passed my test—it's ninety percent of my class grade—or I'll have to go to summer school.
    • Well, I passed the test—granted, I cheated—but I passed!
    • Abby gave me a terrible haircut—and she expected a tip!
  4. Know the other ways to use a dash: Dashes are also used to offset lists placed in the middle of an independent clause, where commas are already used, for example:
    • All of my school work—physics, Academic Decathlon, sociology, and calculus—got washed away when my house was flooded.
    Note: If there is only one appositive (which renames a noun), then you should set that off with commas, not dashes, for example:
    • The best waiter, Alain, can speak three languages.

  5. In dialogue, dashes are used to indicate interrupted speech.

    • "But I—But you said— ... wait, what?" stammered Edna.

  6. Dashes can also be used to emphasize a sentence.

    • Of course, I'll sign a prenuptial agreement—as long as it's in my favor.

  7. Type the dashes in correctly.

    • wikiHow or wikiPedia: Use to express an em dash. The & symbol (ampersand) lets the system know that a code may be coming up. The ; (semicolon) ends the code. Similarly, use for an en dash.
    • When using a word processor, such as Microsoft Word, type two hyphens in between the words you wish to separate, leaving no spaces in between the words and the hyphens. The processor will automatically change the two hyphens into an em dash.

Examples

  • Wrong: We saw two movies at the theater today—but I didn’t really like either of them.
  • Right: We saw two movies at the theater today—but I didn’t really like either of them.
  • Wrong: My best friend—Sam—went to the doctor with me today.
  • Right use of commas: My best friend, Sam, went to the doctor with me today.
  • Right use of the dash: Sam—even though she fears clinics terribly—went to the doctor with me today.
    Note: The last example using 'Sam' is not an appositive; the set off item is a subordinate clause.
TIPS
  • Use dashes instead of parenthesis when the note you are making is more connected to the initial sentence, as parenthesis usually indicate a more separate or personal thought. Use dashes, instead of commas, when the note breaks up the flow of a sentence, as commas are typically used for an item that fits in more.
  • When using a dash—in terms of explanations or listings—in a formal paper, it is recommended to rearrange the sentence so that a colon could be used instead; dashes tend to interrupt the sentence, which is not the desired tone of a formal paper.

Ingredients
1 cup plain couscous (about 6 ounces)
1 teaspoon coarse kosher salt, divided
1/3 cup purchased tapenade
3 tablespoons fresh lemon juice
1 teaspoon freshly ground black pepper
1 pound mahi-mahi fillets, cut into 1-inch cubes
1 cup purchased pico de gallo, drained
Special equipment: Metal skewers
Directions
  1. Preheat broiler.
  2. Bring 1 cup plus 2 tablespoons water to boil in heavy medium saucepan. Stir in couscous and 1/2 teaspoon coarse salt. Remove from heat. Cover and let stand until water is absorbed and couscous is tender, about 10 minutes.
  3. Meanwhile, stir tapenade, lemon juice, 1 teaspoon pepper, and 1/2 teaspoon coarse salt in small bowl to blend.
  4. Transfer 31/2 tablespoons tapenade mixture to another small bowl and reserve for couscous.
  5. Thread fish pieces onto 4 metal skewers; arrange on broiler tray. Brush fish on both sides with remaining tapenade mixture. Broil fish until just opaque in center, about 4 minutes per side.
  6. Fluff couscous with fork. Gently stir in reserved tapenade mixture. Stir in pico de gallo or serve it alongside. Mound couscous on plates. Top with fish skewers.
Serves 4.

Nutella-Swirl Pound Cake


  • ACTIVE: 20 MIN
  • TOTAL TIME: 2 HRS 2 hr plus 2 hr cooling
  • SERVINGS: Makes one 9-by-5-inch loaf

 

 

Ingredients

  1. 1 1/2 cups all-purpose flour, plus more for dusting
  2. 4 large eggs, at room temperature
  3. 2 teaspoons pure vanilla extract
  4. 3/4 teaspoon baking powder
  5. 1/4 teaspoon salt
  6. 2 sticks unsalted butter, softened
  7. 1 1/4 cups sugar
  8. One 13-ounce jar Nutella

Directions

  1. Preheat the oven to 325°. Lightly grease and flour a 9-by-5-inch loaf pan, tapping out any excess flour. In a glass measuring cup, lightly beat the eggs with the vanilla. In a medium bowl, whisk the 1 1/2 cups of flour with the baking powder and salt.
  2. In a large bowl, using a handheld mixer, beat the butter with the sugar at medium-high speed until fluffy, about 3 minutes. With the mixer at medium-low speed, gradually beat in the egg mixture until fully incorporated. Add the flour mixture in 3 batches, beating at low speed between additions until just incorporated. Continue to beat for 30 seconds longer.
  3. Spread one-third of the batter in the prepared pan, then spread half of the Nutella on top. Repeat with another third of the batter and the remaining Nutella. Top with the remaining batter. Lightly swirl the Nutella into the batter with a butter knife. Do not overmix.
  4. Bake the cake for about 1 hour and 15 minutes, until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 15 minutes. Invert the cake onto a wire rack, turn it right side up and let cool completely, about 2 hours. Cut the cake into slices and serve.

    The pound cake can be kept in an airtight container at room temperature for up to 3 days.

Remind you of the ice cream man???

Who cares that summer is officially over?!?  Those of us who live in Florida have yet to pull out our ancient coats or leave the windows open at night.  So that means a bit more time to enjoy the hot days with some cool ice cream.....Remind you of the cones that you could get from the ice cream man???
Ok, so this isn't your ice cream man's cone! Make the most out of the weekends by the pool and get creative!  They are easy and you can make them in any combination! 


Baking pasta with cheese on top creates a chewy and crispy topping kids will love. You can assemble the dish ahead and refrigerate it, then bake it right before dinner. Try this recipe with 1 pound of spaghetti (cook a few minutes less than the package instructions direct). Don't worry if it seems like there's too much sauce; it will be absorbed as the pasta bakes.

Prep: 25 minutes
Total: 50 minutes

Ingredients

Serves 4 to 6
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • Coarse salt and ground pepper
  • 1 1/2 teaspoons dried thyme, or oregano
  • 1 can (28 ounces) whole tomatoes
  • 1 can (28 ounces) crushed tomatoes
  • 2 pounds store-bought ravioli
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Directions

  1. Preheat oven to 425 degrees. Heat oil in a large saucepan over medium heat. Add onion and garlic, and season with salt and pepper; cook, stirring occasionally, until softened, about 5 minutes. Add thyme and tomatoes. Bring to a boil, reduce heat, and simmer, breaking up tomatoes with spoon, until sauce is thickened and reduced to about 5 1/2 cups, 20 to 25 minutes.
  2. Meanwhile, cook ravioli in a large pot of boiling salted water just until they float to the top (pasta will continue to cook in oven). Drain pasta; return to pot.
  3. Toss sauce with pasta. Pour pasta into a large gratin dish or 9-by-13-inch baking dish, and sprinkle with cheeses. Bake until golden, 20 to 25 minutes. Cool slightly before serving.

PINK RIBBON TRIO Centerpiece

You’ll Need:
Glass cylinder vases in 3 different heights
Decorative pink papers in 4-5 different patterns
Rhinestone word stickers (optional)-
¼” pink fabric ribbon
Pink Flowers (enough for all 3 vases)
Tape & Double-stick tape
Scissors or Paper Cutter
Directions:
Trim 3 different patterns of paper to a height that matches each of the 3 vases, then wrap each vase completely. Use tape to secure the first edge, then double-stick tape to secure the outer edge of the wrap to create a clean seam.
Next, trim a different, contrasting strip of paper to place on top of the first layer of each vase. The top layer should be anywhere between ¼ – ½ the height of the first layer. Line the edge created between the 2 layers of paper with the light pink ribbon.
Next, add the flowers. We used a small potted pink hydrangea plant for the tall vase and tight bunches of bright pink roses for the shorter vases.
Finally, add the rhinestone word stickers (optional), as well as a small pink ribbon symbol to the top of the tallest vase.

How to vacuum


On carpet, use slow, repetitive front-to-back motions in an overlapping sequence. A quick once over doesn’t do much.  On the other hand, don’t press down or make too many passes over the same spot. Instead, move slightly to the left or right about every four strokes.
To get the most out of your vacuuming regime, remember these few easy tips:
  • When vacuuming, don’t ignore those corners and crevices where dust builds.
  • “Top-down” cleaning saves you the step of vacuuming again after dusting. Dust blinds, windowsills, and furniture surfaces first and then vacuum away any fallen dust.
  • Remember to remove and replace or empty vacuum bags when they are half to two-thirds full.

Fast & Easy Dinner: Tofu Parmigiana

Tofu Parmigiana
From Eating Well

Ingredients
1/4 cup plain dry breadcrumbs
1 teaspoon Italian seasoning
1 14-ounce package firm or extra-firm water-packed tofu, rinsed
1/4 teaspoon garlic powder
1/4 teaspoon salt
2 teaspoons plus 1 tablespoon extra-virgin olive oil, divided
1 small onion, chopped
8 ounces white mushrooms, thinly sliced
1/4 cup grated Parmesan cheese
3/4 cup prepared marinara sauce, preferably low-sodium
1/2 cup shredded part-skim mozzarella cheese
2 tablespoons chopped fresh basil
Directions
  1. Combine breadcrumbs and Italian seasoning in a shallow dish.
  2. Cut tofu lengthwise into 4 steaks and pat dry. Sprinkle both sides of the tofu with garlic powder and salt and then dredge in the breadcrumb mixture.
  3. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add onion and cook, stirring, until beginning to brown, about 3 minutes. Add mushrooms and cook until they release their juices and begin to brown, 4 minutes more. Transfer to a bowl.
  4. Add the remaining 1 tablespoon oil to the pan. Add the tofu steaks and cook until browned on one side, about 3 minutes.
  5. Turn over and sprinkle with Parmesan. Spoon the mushroom mixture over the tofu, pour marinara over the mushrooms and scatter mozzarella on top. Cover and cook until the sauce is hot and the cheese is melted, about 3 minutes. Sprinkle with basil and serve.
Serves 4.

Happy Hour: Raspberry Shag

Sometimes you just need a girlie pink vodka cocktail with a fun name. Enter the raspberry shag.
Don't be fooled by the vibrant color. This drink - a mixture of sugared muddled raspberries, vodka, lemon juice, and soda - is not overly sweet. It is smooth, refreshing, and fruity.
The original recipe calls for strawberries, but I decided to try raspberries instead. I think any berry, like blackberries or blueberries, would work well in this concoction, so use what you have on hand. To check out the recipe, read more.

Raspberry Shag

Ingredients
1 to 2 large sprigs of fresh basil
1/4 cup sugared raspberries, with juice (recipe below)
1 1/2 ounces vodka
1 ounce fresh lemon juice
2 to 4 ounces chilled soda water
fresh raspberry, optional for garnish
Directions
  1. In a cocktail shaker, press the basil and strawberries together with a muddler to release the basil's flavor.
  2. Fill the shaker with ice. Measure in the vodka and lemon juice. Cap and shake vigorously.
  3. Pour into a large glass, top with soda water, and stir. Garnish, if desired, with a raspberry.
Makes 1 drink.
Sugared Raspberries
1 pint fresh raspberries
1 1/2cups powdered sugar
Mix the ingredients together in a small bowl and let sit for 15 minutes before using.

Maple Pecan Popcorn


Maple Pecan Popcorn

Makes about10 cups
  • Active time: 35 min
  • Start to finish:1 hr (includes cooling) 
 
What could be more American than candy corn? Try maple pecan popcorn treats, for starters. They’re made with three ingredients—maple syrup, pecans, and popcorn—that originated in the New World.
  • About 8 cups plain popcorn
  • 1 cup pecans (3 1/2 oz), coarsely chopped and toasted 
  • 3/4 stick unsalted butter
  • 1 1/2 cups pure maple syrup
  • 1/2 teaspoon salt
  • Equipment:

    a candy or deep-fat thermometer
  • Toss popcorn and pecans in a large bowl.
  • Line bottom of a 17- by 11-inch 4-sided sheet pan with foil, then lightly oil foil.
  • Melt butter in a small heavy saucepan over medium heat. Add maple syrup and salt and boil (still over medium heat), without stirring, until thermometer registers 300°F, 15 to 20 minutes.
  • Pour syrup over pecans and popcorn, stirring briskly with a lightly oiled spoon or silicone spatula to coat, then immediately spread popcorn in pan in 1 layer. Cool completely, then break into bite-size pieces.
Cooks’ note:
    Maple pecan popcorn keeps in an airtight container at cool room temperature 1 week.
